- Wash eggplants well, do not peel off the skin and leave the stem on!
- Prick the aubergines all around with a fork and cook in the oven until they are soft. Let cool slightly and carefully peel off the skin.
- Slightly flatten the aubergines, you can hold them at the top of the stem.
- Make a dough out of eggs, flour and salt. Hold the flattened aubergines by the stem and turn them in the egg. Fry in the oil until brown.
