The preparation is very easy. Cut the aubergine into 4 slices, season with salt and leave to rest for a moment. Meanwhile, cut the cherry tomatoes and cheese into slices and chop the herbs and garlic. If you like, you can also cut a few brown mushrooms into slices.
Let a pan with a little oil get hot, on the highest setting on our stove. Dab the aubergine slices and brown briefly on both sides in a hot pan. If available, fry the mushrooms and / or the ham cubes briefly. Then you can reduce the heat and cover the slices with herbs, tomatoes, garlic, cheese and mushrooms directly in the pan, add a little salt and pepper. With the lid closed, the cheese melts in less than five minutes.
Makes one serving to fill you up and two servings as a light snack.
