- Wash the eggplant and cut into 3-4 mm thick plates.
- Place the eggplant in a bowl and sprinkle with salt. Leave for 10-15 minutes to let the eggplant juice and bitterness comes out of them.
- The eggplants let the juice go. Drain off excess liquid and rinse the eggplant with cold water to remove the salt.
- Pour over the eggplants with vegetable oil.
- Put the eggplants in a preheated skillet and fry on both sides for 2 minutes.
- Prepare the ingredients for the eggplant rolls. Peel and wash the garlic.
- Grate hard cheese on a fine grater.
- Pour the cheese into a bowl. Squeeze out the garlic with a garlic press or rub on a fine grater. Add more garlic if you like it spicier.
