The recipe is very simple, eggplant with minced meat is easy to prepare! Longer storytelling than cooking! Eggplant rolls keep their shape well, while they just melt in your mouth. Eggplants, peppers, tomatoes, young garlic and herbs – this is the taste of summer! For lunch or dinner, choose when to cook and enjoy cooking!
Cut the eggplants lengthwise into long slices, sprinkle with salt, and set aside for 30-40 minutes (the eggplants will release juice). Then we rinse and dry the eggplants with a paper towel.
Fry the eggplants on both sides in a little oil until light golden brown, until half cooked.
Chop the onion in a way convenient for you and combine it with minced meat and egg. Add salt, black pepper and mix well.
Cut the tomatoes crosswise and pour boiling water for 1 minute – so they are well peeled.
Cut the peeled tomatoes into small cubes.
We collect eggplant rolls with minced meat. Wrap a spoonful of minced meat in eggplant.
At the bottom of the pan, where we will cook, put the pepper cut into strips. Here is also young garlic, cut in half.
Lay the eggplant rolls tightly on the garlic-pepper pillow so that everyone can enter.
Pour the tomatoes on top along with our juice and add hot pepper if desired. Gently pour boiling water over everything to the top of the rolls. And we cook eggplants with minced meat and vegetables over low heat for 30 minutes – if minced chicken, 40 minutes – if it’s pork, and 60 minutes – if minced beef.
After 15 minutes, when it boils, try it with salt. Add salt if necessary. Add chopped greens 5 minutes before cooking.
