Instructions

  1. Sear the aubergines over an open flame while grilling until they turn black. Then peel off the skin. Peel and finely chop the onions, then mix with the aubergines.
  2. Make a mayonnaise from the egg, mustard and oil - mix the egg yolks with the mustard and then beat in enough oil to make a mayonnaise.
