Grill the aubergines in the oven on the wire rack lined with baking paper until the peel can be easily removed. Peel and chop the aubergines.
At the same time press the garlic and mix with salt. Mix the natural yoghurt, quark and creme fraîche with the garlic. Spread the aubergines on a plate and pour the yogurt mix over them.
Tip: Always in summer you can prepare the aubergines on the charcoal grill - that gives a great smoky taste. If you like, you can also add seared meat.
