Instructions

  1. Wash the aubergine and remove the stalk. The eggplant in small. Cut pieces, season with salt and let them steep for approx. 1 hour. Peel the garlic clove and the onion and also in small. Cutting pieces.
  2. Let the oil get hot in a pan, add the onion and garlic, then add the aubergine pieces and fry everything well. Then add the balsamic vinegar, honey and sugar, season with a little salt, pour in some water and steam everything well, this takes about 10-20 minutes.
