Hard boil the eggs in 12 minutes. In the meantime, dice the gherkins and shallot as finely as possible.
Rinse the hard-boiled eggs well, peel them and then cut into small cubes. By the way, an egg slicer helps immensely. You put the egg in it lengthways and crossways and it is wonderfully cut into small pieces. If you like it even smaller, you can still help with the knife.
Mix the chopped eggs carefully (!!!) with all the other ingredients and let them steep in the refrigerator for 3 hours.
I just eat it on bread with a leaf of lettuce underneath. But it also goes very well with smoked salmon. It is also highly recommended for sandwiches.
The taste is very reminiscent of Heinz`s legendary sandwich spread. Unfortunately, this is no longer available in Germany.
