Instructions

  1. Wash the vegetables, peel them if necessary and cut them into small pieces or rings.
  2. Cut the sun-dried tomatoes into small pieces.
  3. Fry the carrots with the bell pepper, mushrooms and garlic in a little oil. Salt and pepper everything. Sprinkle some sugar over it and let it caramelize. Stir in the nano mint. Let cool down.
  4. Mix the minced meat with the spring onions, breadcrumbs, egg, parsley, salt, pepper and cayenne pepper. Add the cooled vegetables. Knead everything well and season to taste.
  5. Preheat the oven to 200 ° C (top / bottom heat with hot air 180 ° C).
  6. Grease a muffin tin well with oil (or clarified butter).
  7. Roll out the puff pastry. Using a bowl as a template (the diameter depends on the muffin tins in the tray! Try using paper beforehand!) Cut out circles from the dough and line the muffin hollows with them, the dough should extend over the edge.
  8. Now fill each dough cavity with approx. 2 tablespoons of minced meat batter (fill it up really well, nothing overflows). Using a jar, cut a smaller lid out of the puff pastry and place it on the patties. Press the lid firmly on the protruding edge.
  9. Shape the remnants of the pastry into small leaves, hearts and decorate the patties with them.
  10. Brush the patties with the egg yolks mixed with water. Use a fork to poke a few holes in the pie lids to allow the steam to escape.
  11. Bake the patties in the preheated oven for approx. 40 - 45 minutes until golden. After baking, carefully remove from the muffin tins (if necessary remove the edges with a wooden spatula).
  12. Tomato sauce and a fresh salad go well with this.
  13. The patties can be served warm or cold (at the buffet, as finger food ).
  14. The indicated amount is sufficient for approx. 10 patties.
  15. If larger quantities are required, the patties can be prefabricated and stored in the refrigerator (important: only brush the egg yolk and pierce before baking !!). With hot air, several muffin trays can be baked at the same time.
