Instructions

  1. Lightly brown the chopped almonds in a coated pan without fat, then remove from the pan. Peel and core the apples and cut into not too large cubes. Melt the butter in the pan. Add the tablespoon of sugar, heat briefly and add the apples with cinnamon to taste. Steam the apples a little soft over a low heat. After about 2 minutes add the apple or orange juice and steam for another 2-4 minutes, depending on the size of the apple cubes. The apples should just be a little softer, not mushy!
  2. For the quark oil dough, mix the quark, sugar, vanilla sugar, orange zest, salt, lemon juice and ground almonds and stir until smooth. Then add milk and oil and mix thoroughly. Sift the flour and baking powder together and add half of them to the quark milk. Mix thoroughly so that no lumps form. Knead in the remaining flour by tablespoon. The dough sticks a little on the hands! Add the apples and almonds and knead in.
  3. With the help of two tablespoons, place about 16 dough balls on a grid lined with baking paper. On the sheet metal, they will become quite solid on the ground, so be careful! Brush the dough blanks with condensed milk, this gives a nice brown color and loosens the crust. If you like, you can add 1 teaspoon of powdered sugar to the condensed milk, it gives a light caramel crust. Milkmaid works too, but you can vary the sweetness yourself, as the rolls themselves don`t taste particularly sweet.
  4. Bake in the oven at 180 ° C for about 15-20 minutes. The baking time varies depending on the oven and the size of the rolls. If they are golden in color, then they are done.
  5. The wake-ups are traditionally baked for holidays, especially Easter, and are a hit with my children. They can be frozen well.
  6. Tip:
  7. Place in a bread basket lined with a kitchen towel to cool down. Cover completely so that they cool down slowly and remain fluffy with a light crust.
