Prepare the tea and let it steep for 3 minutes. Cut the vanilla pod lengthways and scrape out the pulp. Bring the elderberry juice, grape juice, orange juice, vanilla pulp and the pod to the boil in a small saucepan. Pour in the tea and add honey to taste.
Take out the vanilla pod and pour the punch into 4 glasses. Top with 1 tablespoon of whipped cream.
