Instructions

  1. This recipe is to be understood as a guideline. The taste can vary greatly depending on which elderflower syrup you use. I always use my homemade one (recipe in my profile). I recommend testing this espuma and then changing the amount of ingredients if necessary. The total amount of liquid should always be 250 ml. The syrup may have to be sweetened even more or lemon juice added. Your own sense of taste is required here.
  2. Soak the gelatine in cold water. Mix the elderflower syrup with the cream. Heat the 50 ml of water and dissolve the well-squeezed gelatin in it. Add about 1/3 of the elderflower mixture and stir in. Then stir this into the rest of the elderflower mixture.
  3. Fill everything in the isi and screw in two capsules one after the other. Put the isi in the cold for about ½ day.
  4. Spray the espuma into small glasses and serve immediately.
