Instructions

  1. For the mousse:
  2. Soak the gelatine in cold water, heat the elderflower syrup and dissolve the gelatine in it.
  3. Scrape out the vanilla pod, mix the pulp with the yoghurt, stir in the gelatine-elderberry solution. Whip the cream until stiff and fold it into the yoghurt mixture. Depending on your taste, add elderflower syrup, chill the mixture and let it set.
  4. For the strawberry ragout:
  5. Wash the strawberries, remove the stems and cut into fine cubes. Finely chop the mint. Mix the strawberries with sugar, mint and pepper from the mill and let them steep in a cool place (can also be done overnight).
  6. The dessert can be served in layers filled in glasses, or you can knock off the yoghurt mixture and serve it with the strawberries.
  7. The exact amount of mint and elderberry syrup depends on the intensity of the ingredients and the individual taste, just try it out!
