- Cut the endive salad into fine strips, wash and dry. Peel, core and dice the pears. Roast the walnuts in a pan without fat.
- For the dressing, mix balsamic vinegar, pear juice, nut oil, salt and pepper.
- Mix the endive strips and the pears. Pour the dressing on top. Scatter the nuts on top and serve the salad.
