Instructions

  1. Pour the boiling vegetable stock over the couscous and cover and leave to soak for 5 minutes.
  2. Mix the yogurt, lemon juice, olive oil, salt and pepper, if necessary stir in mint.
  3. Core and dice tomatoes as desired (the lettuce becomes a little more liquid when left standing for a long time if the tomatoes are not seeded).
  4. Mix everything and, if necessary, season again with salt and pepper.
