Instructions

  1. First you squeeze the lime. Then you cut the mango and papaya into approx. 2cm large cubes and add them to the lime juice so that they keep their color.
  2. Then the sugar and the lime juice, which can still be poured from the fruit, are heated and caramelized a little, deglazed with water and chantré and half the vanilla pod that has been scraped out is added. Reduce the whole thing to a good 2/3. Then add the fruit and simmer gently for about 10 minutes so that there is only a little juice left. Remove the vanilla pod and let the compote cool.
  3. Tastes wonderful with coconut or vanilla cream.
