Cook the rice in salted water according to the instructions on the package. Let cool in a large bowl.
Peel and fillet the oranges, collecting the juice. Cut the pineapple into small pieces, as well as the banana. Mix the fruit with the collected juice, the lime juice and the zest, honey and sambal manis.
Toast the desiccated coconut lightly in a dry pan. Add the cooled rice to the fruits and fold in carefully. Then decorate with coriander and some desiccated coconut.
