Whip the cream until stiff. Beat the quark with vanilla sugar, sugar and lemon zest until the sugar has dissolved, which takes 1-2 minutes. Carefully fold in the whipped cream.
Put the shortbread biscuits in a mold as the first layer (I took a brownie pan, exactly 16 biscuits were enough for the first layer). Now put a good half of the applesauce on the biscuits, then half of the quark cream. Sprinkle some cinnamon on top. Do the same again so that the tiramisu ends with the quark cream. Dust some more cinnamon on the cream and put the tiramisu in a cool place.
It now has to brew for 4 hours, it would be best to do it all over night, then it unfolds its full flavor!
It`s a light and fresh variant! If you like it even easier, replace sugar with sweetener and cream with Cremefine!
