Peel the kohlrabi and grate it into thin pieces / slices with a grater. Peel the onion and cut into rings.
Heat the oil and fry the onion in it until translucent.
Mix the kohlrabi with 1 tablespoon of oil, oregano, salt, pepper and cayenne pepper. Add the kohlrabi to the onions and reduce the heat. Add the parsley, ham and turmeric and continue frying. If the kohlrabi is too hard, add a little water and let it simmer.
For the vegetarian variant, replace the ham with vegetarian bacon cubes or fry without ham at all.
