Mix the soy sauce with the sherry, sambal oelek and honey. Peel the garlic and press it through the press. Slit the chili peppers lengthways, remove the stems and seeds, wash, pat dry, cut into small cubes and add to the marinade.
Place the hip steaks in a bowl and pour the marinade over them. Cover and marinate in the refrigerator for about 6 hours, turning every now and then.
Remove the steaks from the marinade and pat dry.
Grill for 10-12 minutes on each side, brushing the marinade over and over again.
