Instructions

  1. Peel and slice the jacket potatoes. Dice the onion and fry in oil, add the potato slices, season with salt, pepper and fry until light brown.
  2. Whisk the eggs and yolk with the milk and chopped chives and fold into the roasting potatoes. Do not make the whole thing too firm, but let it stay nice and juicy. Is quick and very filling.
