Mix the water with the yeast, the olive oil and the salt. In a large bowl, process the flour with the water mixture using a dough hook to form a dough, sprinkle the dough with a little flour and cover with a kitchen towel for 30 - 40 minutes.
Preheat the oven to 225 degrees.
Knead the dough again, cut it into thirds, shape the pieces into 3 breadsticks and place on a baking sheet or baguette tray lined with baking paper, cut diagonally and let rise for another 10 minutes.
Place a cup of hot water in the oven at the bottom, brush the bread with water and bake for 45 - 50 minutes on the middle rack at 200 degrees. Let cool on a wire rack.
