Instructions

  1. First peel the onion and dice it. If necessary, scrape and slice the carrots. Roughly dice the paprika, peel and dice the celery and potatoes. Halve the zucchini lengthways and cut into slices. Clean the leek and cut into rings. Dice the sausage.
  2. Heat the olive oil in a saucepan and sweat the onion cubes until translucent. Add carrots and celery and sweat too. Sauté the potatoes and bell peppers and add the zucchini slices and the leek. Pour hot broth on top and let the lid simmer over low heat for about 20 minutes.
  3. In the meantime, slowly fry the sausage cubes in a pan. Chop the marjoram and parsley. At the end of the cooking time, add the sausage cubes and the herbs to the soup, leave to stand for 10 minutes. Now season with salt, pepper and a little soy sauce (if you like).
  4. A piece of bread or baguette is enough.
