Cut the radicchio into strips. Cut the stalks from the fennel and put the cabbage aside. Now cut the fennel into fine strips as well. Next, peel and fillet the oranges. Chop the herbs and spring onions. Put everything in a bowl.
For the dressing, mix all the ingredients together and pour over the salad.
Tips: You can use roasted chickpeas or nuts of your choice as a topping.
I could also well imagine that romaine lettuce or chicory go very well with fennel.
