Instructions

  1. Halve the fennel and cut into very fine slices, slice or use the food processor to make small cubes.
  2. Finely slice the onion, add a little salt and set aside.
  3. Peel and core the apple and cut into small strips or wedges. Peel and clean the mandarin and cut into small pieces.
  4. Rinse the onions and add to the other ingredients.
  5. Add spices, vinegar, honey and oil.
