Instructions

  1. First peel the raw potatoes, wash them and cut them into slices, then heat the margarine in the pan and fry the potato slices at medium temperature, stirring every now and then.
  2. It takes a while because the potatoes are raw.
  3. In the meantime, if you have used salami, cut it into cubes; if you have diced ham, do not do this.
  4. Then come the onions, which I always cut into very coarse pieces, but it`s a matter of taste, can also be smaller.
  5. When the potatoes are almost golden brown and done, I add the onions and salami / ham cubes. Season everything properly with the spices and spread the herb butter piece by piece on top. When this has melted, I add the chives.
  6. After everything is well swirled and done or as golden brown as you like it, I break the eggs in a bowl and pour them over the fried potatoes, stirring / swirling again and again.
  7. When the egg is well done in the pan, turn off the stove.
  8. Now spread the slices of cheese on top and let them melt briefly with the lid closed (no lid for the pan - also works in the oven).
  9. I also serve pickled cucumbers and if you like, you can also make a fried egg on top.
