In a large bowl, season the flour, cumin, curry powder and parsley with salt, pepper, thyme and oregano. Put the vegetables (carrots, zucchini and onions) in the seasoned flour and mix everything together well. Finally, mix in the beaten egg and feta.
Heat olive oil in a pan and add a heaped tablespoon of the mixture to the pan and press flat. Bake the patties on each side for about 2 minutes until golden brown and then drain on kitchen paper.
