If you don`t have the time, you can simply take a glass of ready-made sharp ajvar. It works just as well and tastes just as delicious.
Now clean the head of cabbage and cut in half. Cut the halves into 1.5 cm slices and cut them into 1.5 cm cubes. Peel and chop the onion and garlic.
Heat the coconut fat in a sufficiently large saucepan and fry the cabbage cubes until they have a minimal brown shimmer. Now switch the heat down to medium level. Add the onion and garlic and fry for about 5 minutes. Pour on the vegetable stock, add the ajvar and coconut milk and bring everything to the boil again. Add lemon juice and let the soup simmer with the lid closed on low heat for about 45 minutes. Season to taste and, if necessary, add chilli and salt.
Without coconut milk, it is low in fat and suitable for diets.
This soup can be made the day before, because it tastes even better after a day.
