Heat the olive oil in a saucepan, sauté the onion cubes until translucent, add the pepper pieces and sauté. Now also add the garlic (but don`t let it turn brown, otherwise it will be bitter). Deglaze with the vinegar, add the remaining ingredients and simmer until thick. If you like, you can go through it again with the blender at the end.
Sterilize twist off jars and fill in the mixture immediately and seal.
