Instructions

  1. First, soak the bread roll well in the milk for the meatballs.
  2. Peel the onion, dice it and sauté in the butter until translucent. Squeeze out the bread roll (if necessary), add the onions, mix briefly and knead the whole thing with the minced meat and egg.
  3. Add the paprika powder and season with salt and pepper to taste. If the mixture is still too soft, knead in some breadcrumbs.
  4. Place in the refrigerator so that the minced meat can bind well.
  5. For the soup, peel the onion and cloves of garlic, dice them, core the peppers and cut into fine strips. Heat the butter in a saucepan, first sauté the onion and garlic in it, then add the chopped peppers and sauté briefly. Sweat the tomato paste in it, then deglaze with the tomatoes, stir well and then stir in the chopped tomatoes. Season with the paprika powder and stretch to the desired consistency with the vegetable stock (cooks a little more).
  6. Now add oregano, thyme and basil, cover and let simmer.
  7. Meanwhile, form dumplings the size of a table tennis ball from the minced meat mixture. Add this to the soup together with the kidney beans and let it simmer for about 10-15 minutes (do not let the soup boil again, especially at the beginning, so that the dumplings do not disintegrate).
  8. Then dilute the soup a little more as required, season with salt and pepper and - if necessary - sharpen it a little with chili powder.
  9. Tastes warm, lukewarm as well as cold, can be reheated easily and is quite easy to cook in large quantities.
  10. The specified amount is sufficient for 4 people as a main course. Fresh white bread goes well with it.
