  1. Prepare fruit:
  2. Wash the lemon with hot water, dry it, rub off half of the lemon peel. Squeeze the lemon. Peel apples, cut into pieces, peel mango, cut into pieces, wash figs with hot water, cut into pieces. Scrape out the pulp of half a vanilla pod.
  3. Weigh the fruit:
  4. Weigh out the pulp of the figs, the mangoes and the juice of the lemon, weigh out the apples until you have 900 g.
  5. If you want to chop up the fruit in the food processor or Thermomix, you can, but don`t have to.
  6. Add 300 g preserving sugar 3: 1 and the grated lemon zest and the vanilla pulp. If you cook on the stove, it is best to continue according to the instructions on the package - the sugar usually has to go through a bit. Make a gel test - as usual.
  7. If you cook in the Thermomix, it is best to chop the fruit on level 4 and then set it to 100 degrees for 12 minutes on level 2.
  8. Rinse screw jars with hot water, pour jam hot, screw jars shut. No need to fall! It pops after a while.
  9. Tastes very good on bread and butter and also on Camembert.
  10. (If you can`t get fresh mangoes, you can buy frozen mangoes and thaw them, it is just important that they are ripe.
  11. The amount makes 5 small jam jars + a small remainder to taste.
