For the pizza dough, knead the flour, yeast, olive oil, salt, sugar and water for about five minutes. Let rise in a warm place for 45 minutes, then let rest in the refrigerator for two days. Alternatively, if you have to go faster, use about half of the yeast and let it rest in the warm for 2.5 hours.
Preheat the oven to 250 degrees pizza setting, alternatively top / bottom heat, if available with a pizza stone.
Roll out two pizzas thinly to a diameter of approx. 30 cm. Cut the mozzarella, figs and goat cheese into thin strips and cover the pizza with them. Bake the pizza for about eight minutes until the cheese turns golden brown. Spread the honey and rosemary over the top before serving.
