Instructions

  1. For the dough, melt the butter, then stir together the quark, sugar, egg, oil, butter, vanilla extract, salt and lemon zest. Mix the flour with the baking powder and stir in.
  2. Preheat the oven to 180 degrees and line a baking sheet with parchment paper.
  3. Peel, quarter and cut the apples into small cubes. This is then put into a small saucepan with the raisins, butter, sugar, lemon peel and lemon juice and the whole thing is heated. Let it simmer for about 5 minutes, until the apples are soft. Set aside, allow to cool completely and remove the lemon peel.
  4. Now roll out the dough about 5 mm thick on a well-floured work surface. It is a bit soft and you also dust it a little on top. Use an 8 cm round cookie cutter to cut out circles. Place this on the prepared baking sheet with the help of a spatula. Now put a well-heaped teaspoon of the apple mixture in the middle of each cookie. Leave a margin of about 1cm free. Brush this edge with the whisked egg, place a second cookie on top and press it all around. The cookies are then coated with the egg at the end. They are then put in the oven and baked there for about 20-30 minutes until they are golden in color. Let cool down on the baking sheet for about 2 minutes, then transfer to a wire rack and let cool down completely. These apple biscuits taste best fresh, depending on the size, the dough makes 10-15 biscuits.
