Instructions

  1. Ashta:
  2. Stir the cornstarch into the still cold milk, and bring the vanilla sugar and rose water to the boil while stirring until lump-free. When it turns like pudding, chill.
  3. Znud el Set: Cut 2 thin layers of the dough into 6 equal parts. Take one part and cut another part in half and lay it horizontally at the bottom so that it looks like an inverted T. Spread an appropriate amount of the ash on the strip. Fold both sides of the strip in the middle. Then the beginning too and curl up. Then seal with the previously prepared cornstarch-water mixture so that it does not fall apart. Fry in hot oil until golden brown and crispy.
  4. Atir (sugar syrup): Boil the water and sugar for 10 minutes until it thickens, then add a splash of lemon juice and a dash of rose water.
  5. To serve, dip the finished Znud el Set in the syrup, spread the ash on it and sprinkle with pistachios.
