Roll out the puff pastry and cut into 15 equal-sized squares. Peel, core and chop the apples. Then cook with a little apple juice in the microwave or in a saucepan until all the juice has boiled down nicely and a delicious apple sauce is created.
If you want to save yourself the trouble, take ready-made applesauce from the jar - but I personally like it better when I make it myself. Mix the warm applesauce with cinnamon and sugar or marzipan, almonds and raisins.
Use a small spoon to portion on a puff pastry square and fold into a triangle. Seal the edges with a fork. Put 2 - 3 holes in the pockets with a toothpick or similar so that they do not burst! Bake at around 180 ° C for about 15-20 minutes, depending on how light or dark you want the pockets to be.
The pockets can also be filled seasonally with other fruit, such as pears, berries or peaches.
