Instructions

  1. Heat 1 tablespoon of oil in a wok, fry the garlic, onion and the chopped chilli pepper, add the minced meat, crumble with a wooden spoon and fry for about 5 minutes until lightly browned. Then season with fish sauce, oyster sauce, palm sugar, pepper and lime juice. Stir in the spring onions, tomatoes and sprouts and let cook for another 1 - 2 minutes. Finally mix in the coriander. Put aside.
  2. For the omelettes, whisk the eggs without creating too much foam and season with fish sauce.
  3. Heat 1 tablespoon of oil in a large non-stick pan and pour in half of the egg mixture. Turn the temperature down to a mild medium heat and let it set slowly. When the omelette is only shiny on the surface, place half of the minced meat mixture in the middle.
  4. Then carefully fold the omelette from all four sides towards the center, creating a square. Turn out onto a plate, slide from there onto a preheated plate and keep warm. Prepare the second omelette in the same way.
  5. Add to the first one on the plate and garnish with coriander and chilli strips.
  6. You can also eat fragrant rice.
  7. Annotation:
  8. You can also replace the sprouts with 3 - 4 tablespoons of peas.
  9. If you find it difficult to pack the parcel, put the filling on one half of the omelette and fold the other side over it.
