Instructions

  1. Dice the bacon and fry in 2 tablespoon butter until golden. Add the diced onions and marjoram and sauté everything until translucent, then allow to cool a little.
  2. Peel, core and dice 2 of the apples and mix with lemon juice, prepared bacon and onions, egg, finely chopped parsley and ground almonds.
  3. Poke out the core of the 4 remaining apples, place the apples on a baking sheet lined with baking paper and fill with about half of the apple, bacon and onion mixture. Cover the baked apples with 2 tablespoons of butter in flakes and bake in the preheated oven at 175 ° C for about 45 - 50 minutes.
  4. In the meantime, salt and pepper the beef fillet and fry it vigorously in the hot clarified butter, then brush the meat on top with the remaining apple, bacon and onion mixture, place with the apples and fry until the end (approx. 40 minutes).
