Sweat the prepared vegetables and the pears in a little olive oil in a saucepan, season with salt and pepper. Add spices, if available, add some washed celery leaves. Pour in the vegetable or chicken broth, the vegetables should be well covered, and cook for about 15 to 20 minutes. Remove celery leaves.
Puree very finely in the blender. Then pour back into the pot through a fine sieve and let it get hot again. If the soup is still too thick, add water. Add lime juice to taste. If necessary, season with a little salt and pepper.
Fill into soup bowls, garnish with 1 teaspoon of crème fraîche and a little herbs. Serve with fresh baguette.
