Instructions

  1. Preheat the oven to 170 ° C fan oven.
  2. Finely puree the dates with the cream, the pulp of the vanilla pod and the cocoa powder. Then add the egg yolks and butter and puree until the mixture is homogeneous and smooth.
  3. Beat the egg whites until stiff. Mix the flour and baking soda into the cocoa mass and then carefully fold in the egg whites.
  4. Pour the cake mixture into any baking pan that has been greased with butter and bake in the oven on the middle rack for approx. 40 minutes.
  5. The recipe makes 16 pieces and is also suitable for muffin tins. You can also add orange zest, ground nuts, nut butter, chilli, cinnamon, ginger and cardamom or cherries to the cake.

  8. I use soft dates, they are softer than conventional dates. If you only get firm dates, please soak them in slightly warm water for about 4 hours.
