Instructions

  1. Heat the butter and sweat the onion cubes until translucent, add the garlic and sweat for a short time. Now the green spelled comes in, briefly roasted and then pour on the broth. Let everything simmer together for about 15 minutes. Set aside for 15 minutes and let swell a little more.
  2. In the meantime, whisk the cream, wine and egg yolk together. Bring the soup to the boil, take it off the stove, add salt, pepper and mix with the cream mixture. Don`t let it boil anymore. Fill into plates and sprinkle with chives.
  3. You can add marrow dumplings, croutons or fried bacon cubes to the soup.
