Pepper the schnitzel and fry in rapeseed oil on both sides for about 2 minutes, season with salt and place on a preheated, ovenproof plate. Mix the grated cheese, egg yolks, cream, rum and a little salt to a pulpy mass. Add the cheese cubes and the chopped walnuts and distribute the mixture over the schnitzel.
In a preheated oven at 200 degrees, crust over for approx. 5 minutes. Sprinkle with chopped parsley before serving.
