Knead the flour, 75 g sugar, flaky butter, 1 egg, baking powder and salt. I don`t put the dough in a cool place, instead I put it on a springform pan (28 cm in diameter) lined with baking paper. I press some edge on the side.
Preparation of the curd mixture:
Separate 3 eggs, stir together quark, 150 g sugar, pudding powder, egg yolk, flavor, vanilla sugar, lemon juice (or 5 drops. Lemon flavor) and oil. While stirring, add small amounts of milk until a thin paste is formed.
Pour the mixture onto the dough in the mold. Bake in a preheated oven (electric stove: 200 ° C / convection: 175 ° C / gas: level 3) for 45 - 50 minutes.
Beat the egg whites until stiff. Sprinkle in 100 g of sugar. Spread the meringue on the cake while it is still warm. Bake at 175 ° C (convection: 150 ° C / gas: level 2) for another 20 minutes.
