Mix the egg with the sugar in a bowl. Add flour, baking powder, salt and desiccated coconut and work with the coconut milk to form a smooth dough. Let the dough rest for 10 minutes.
Peel the bananas and cut in half crosswise. Heat the oil in a pan, wok or deep fryer. The oil is hot enough when small bubbles rise from a wooden spoon that is held in the oil. Roll the bananas in the batter and then fry them in the hot oil over a medium heat for about 4 minutes.
Degrease the bananas on paper towels and pour honey over them and serve while they are still hot.
TIP:
You can also use other fruits such as pineapples or apples.
