Cut the onion and saithe into cubes, cut the mushrooms into slices. Fry the onion, saithe and mushrooms in a pan with a little oil and season with salt and pepper.
Cut the cauliflower into bite-sized florets and add to the pan. Add the water, nutmeg, diced garlic and paprika powder and cook (with lid) until the cauliflower is cooked through. Stir every now and then. Cook the rice on the side.
Finally stir in the creme fraiche in the pan and simmer for another 1-2 minutes. Eat the dish with the rice.
