Grind the oatmeal and mix it with baking powder and cinnamon - cinnamon is of course optional, vanilla extract is also possible, or both. Separate the eggs. Beat the egg whites until stiff and set aside. Whisk egg yolks with buttermilk and then mash the bananas and stir in (works well in a blender too). Stir in the dry ingredients. Finally fold in the stiffly beaten egg whites. Bake about 10 pancakes one after the other in coconut oil over medium heat (otherwise they burn very quickly) - about 3 minutes on each side. They get really thick and fluffy.
