Instructions

  1. Beat the egg white until stiff, carefully fold in the salt, sugar, egg yolk and mondamine.
  2. Bake two omelets from one side of this foam mixture in hot fat over a low heat. Cover half of each omelette with steamed fruit or jam, fold up and serve immediately.
