Cut the turkey meat into thin strips, cut the chilli peppers into small pieces (amount to taste). Put turkey and chilli together in a bowl and marinate with soy sauce. Cover with aluminum foil and refrigerate.
Cut the leek, mushrooms and red peppers. Set aside together and peel the ginger.
Mix the olive oil and a small dash of soy sauce in the wok, add the meat and the pressed garlic cloves and fry. Then add the wok noodles, vegetables, coconut milk, creme fraîche and water and continue to fry for approx. 5 - 10 minutes.
Then season with curry and paprika powder, pepper and soy sauce. Finally grate the ginger. You can leave out salt here, the soy sauce is salty enough.
