Clean the beans, cut in half and cook in salted water for 6 - 8 minutes, then rinse in ice water.
Peel and roughly dice the potatoes. Cut the turkey breast into 1 cm cubes. Peel the onion and cut into strips. Finely dice the gherkins. Mix all ingredients together. Mix vinegar with mustard, crushed garlic and honey, add oil. Beat with the cutting stick and season with salt and pepper. Mix the vinaigrette with the salad. Possibly sprinkle a little vinegar and oil over the salad. If you like, you can also serve hard-boiled eggs.
