For me the best fries in the world !!!! Unfortunately, this type of preparation does not allow large quantities, unless you are working with several woks.
Peel the potatoes and cut into 1 cm thick sticks, pat dry. Heat the oil in a wok to approx. 190 °. Put all the potatoes in the oil. Beware of splashes! Immediate and constant stirring is now important, and this for about 20 minutes. After 5 minutes add the cloves of garlic (only lightly crushed with a knife). Another 5 minutes later, add the herbs. Don`t forget the constant stirring !!! Just before these are ready, add the Himalayan salt. A minute later add pepper and stir again and then put it out on a paper towel so that the oil is absorbed. But only briefly, otherwise cold! Serve immediately! Possibly add salt.
