Whisk the egg with the cashew drink in a deep plate with a fork. Soak 3 slices of toast one after the other for 2 minutes, turn and soak for another 2 minutes.
In the meantime, wash, peel and core the apple and cut into small pieces. Put some water in a small saucepan and cook until soft, then puree into applesauce. Possibly refine with a little cinnamon. Put aside.
Heat 1 tablespoon of butter in a pan and fry 3 slices of toast on each side until golden. Remove from the pan, heat the remaining butter and repeat the process with the remaining slices.
Cut the French toast for the baby into approx. 3 cm wide strips and serve with the cooled applesauce.
You can also process any other fruit into puree or compote. E.g. Pears, plums, peaches, nectarines, apricots etc.
